Prosciutto & Fig Flatbread Pizza
I love figs so much! With their intense sweet and honey flavor, fresh figs can be perfectly paired with something sharp and salty. That makes prosciutto and figs a perfect marriage of flavors. Sadly, living in the northeast part of the country, its very hard to get a hold of fresh figs. They don't travel easily because of their tendency to split and rot if not handled delicately. If you are able to get your hands of some - BUY THEM! This recipe has fig preserves but if you want to substitute real ones for the preserves do not hesitate. Just do it!
Ingredients:
- Pre- made pizza crust or flatbread. I used Brooklyn Bred Pizza crust for this recipe
- 10 oz fresh mozzarella cheese, cut into small rounds
- 2 tbsp fig preserve or 5-6 figs thinly sliced
- 10-12 slices of prosciutto
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- salt and pepper to taste
Directions:
- Preheat oven to 450 degrees.
- Spread the olive oil all over the pizza crust so that a thin layer covers the entirety of the pizza
- Place the mozzarella rounds evenly over the pizza. Remember that the mozzarella will spread once its heated!
- Use a spoon to dollop the fig preserves (or if using fresh figs: lay the slices down) in between the rounds of cheese.
- Sprinkle with salt and pepper
- Place the pizza on a pizza stone in the oven and bake for 5-8 minutes or until the cheese has melted.
- Once the pizza is cooked, remove and top with slices of prosciutto and drizzle with balsamic vinegar!
