White Bean Stew

A few ingredients, 15 minutes and big flavor = Fabulous weeknight dinner! 

Seriously, all you have to do is mince some garlic and open a couple of cans and waal-la you have an impressive meal. I love this recipe so much I usually double the ingredients so I can have leftovers throughout the week!

On nights that I'm just too tired this is one of my go-to recipes. It's warm, flavorful and filling. Sometimes I don't add the ham but I'll hear about it from my husband! 

All you need to do is throw in some minced garlic, chop a big slice of ham, add the diced tomatoes and canneloni beans and your stew is almost complete! 

Brush olive oil over sliced baguette roll and broil until lightly browned. 

Right before serving you throw in baby spinach. The spinach will wilt in a matter of seconds! 

Ingredients:

~4 servings

  • Three garlic cloves; minced
  • 4 tbsp olive oil; divided
  • 1 can of petite diced tomatoes; 14.5 oz
  • 1 can of cannelloni beans juice included; 14.5 oz
  • 1 cup chopped ham; canadian bacon is fine if you can't find a large, thick slice of ham
  • 2 cups fresh baby spinach
  • salt and pepper to taste
  • 1 french baguette; sliced

Directions:

  1. Over medium high heat warm 3 tbsp of olive oil in a large pot then add garlic until fragrant; about 1 minute.
  2. Add the can of petite diced tomato and cannelloni beans (juice included); salt and pepper to taste
  3. Add ham to the pot and bring to a boil.
  4. Meanwhile, brush the slices of the baguette with remainder of the olive oil and broil under high for less than a minute on each side until lightly golden brown.
  5. Bring the stew back down to medium low heat and add spinach; stir until the spinach begins to wilt.
  6. Serve the stew over the slice(s) of bread!
