Summer Fiesta Chicken

Got this delicious recipe from pinterest: Julie's Eats and Treats!

Ingredient

  • 1 lb uncooked chicken, cubed
  • 1 cup uncooked brown rice
  • 1 can enchilada sauce
  • 1 can chopped green chilies
  • 1/2 cup chicken broth
  • 1 medium onion, chopped
  • 1 red pepper, chopped
  • 1 tsp cumin
  • 1/4 tsp salt

Directions

  1. Spray crock pot with non-stick spray and add the chicken, enchilada sauce, green chilies, chicken broth, onion, pepper, cumin and salt.  Stir and mix all ingredients and cook on low for 4-5 hours or high for 2-3 hours.  Serve on a taco and add your favorite toppings: cheese, sour cream, guacamole, etc...Enjoy!
