Plums, Walnuts and Gouda Pizza

It's Friday night and you want pizza but you are craving something a little bit different. Maybe a little bit more fresh? Why not try this amazingly tasty dish? The fresher the ingredients, the better the taste. Once again I turned to my favorite Naan bread to make my pizzas. It's simple and easy which is what I want after a long week. If you have a favorite pizza dough, by all means use that and follow the directions on the package. Everybody's got their preferences but if you've never tried Naan I highly recommend you do! Enjoy!!

    For Pizza:
  • 1/4 cup walnuts
  • 1 package of Naan
  • 1 tbsp. extra virgin olive oil
  • salt
  • 1/2 lb. gouda, shredded
  • 1/4 lb. mozzarella, shredded
  • 2 plums, sliced about 1/4-inch thick
  • For Salad:
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. balsamic vinegar
  • 2 tsp. honey
  • salt and pepper
  • 2 generous handfuls of arugula
  1. Preheat oven to 425 degrees. Lightly coat a baking sheet with olive oil or nonstick spray. Or place directly on a pizza stone if you have one.
  2. Brush Naan with olive oil, then sprinkle lightly with salt
  3. Mix together gouda and mozzarella and sprinkle over Naan.
  4. Top cheese with sliced plums and chopped walnuts
  5. Bake pizzas for about 8-10 minutes or until the cheese is fully melted and bread has turned to a golden brown
  6. While pizza is cooking, whisk together olive oil, balsamic vinegar, honey, and salt and pepper to taste. Next, toss arugula with dressing.
  7. Remove pizzas from oven and allow to cool for a couple minutes before topping with salad. Enjoy!
