Plums, Walnuts and Gouda Pizza
It's Friday night and you want pizza but you are craving something a little bit different. Maybe a little bit more fresh? Why not try this amazingly tasty dish? The fresher the ingredients, the better the taste. Once again I turned to my favorite Naan bread to make my pizzas. It's simple and easy which is what I want after a long week. If you have a favorite pizza dough, by all means use that and follow the directions on the package. Everybody's got their preferences but if you've never tried Naan I highly recommend you do! Enjoy!!

For Pizza:
- 1/4 cup walnuts
- 1 package of Naan
- 1 tbsp. extra virgin olive oil
- salt
- 1/2 lb. gouda, shredded
- 1/4 lb. mozzarella, shredded
- 2 plums, sliced about 1/4-inch thick For Salad:
- 2 tbsp. extra virgin olive oil
- 1 tbsp. balsamic vinegar
- 2 tsp. honey
- salt and pepper
- 2 generous handfuls of arugula
- Preheat oven to 425 degrees. Lightly coat a baking sheet with olive oil or nonstick spray. Or place directly on a pizza stone if you have one.
- Brush Naan with olive oil, then sprinkle lightly with salt
- Mix together gouda and mozzarella and sprinkle over Naan.
- Top cheese with sliced plums and chopped walnuts
- Bake pizzas for about 8-10 minutes or until the cheese is fully melted and bread has turned to a golden brown
- While pizza is cooking, whisk together olive oil, balsamic vinegar, honey, and salt and pepper to taste. Next, toss arugula with dressing.
- Remove pizzas from oven and allow to cool for a couple minutes before topping with salad. Enjoy!
