Quiche! Tomatoes, Onions & Peppers

Here's the thing about making this quiche...you can put almost whatever you want into it! Instead of peppers substitute it with asparagus. Don't like onions? Switch it out for diced sausage links. It makes it your own so you can't mess it up. Cook this easy recipe and enjoy it all week long:) 

Ingredients: 

  • 2 cups eggs, egg whites or egg product
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped onions
  • 1/2 cup chopped peppers
  • handful of sliced grape tomatoes

 

Directions

  1. Preheat oven to 350 degrees  
  2. Mix all ingredients together in a bowl
  3. Spray the cooking dish with butter and pour quiche mixture in
  4. Bake in oven for 30-40 minutes or until center is bubbling; sprinkle additional shredded cheddar as if desired!
