Watermelon Feta Salad
It's simple and delicious and surprisingly filling. The recipe is so easy that you can eyeball the amount of ingredients. You really don't need specific measurements but I added them to help out. If you like more feta, add more! You want 5 cups seedless watermelon? Go for it!
My favorite part of this salad is the mint. It's subtle and powerful at the same time. The mint is what makes you feel healthy when eating this. Well, at least it does that for me;)
