Easy Weekend Breakfast with Farm Fresh Eggs, Spinach and Tomatoes
With a couple of eggs beaten I add a tablespoon or two of milk and whisk again. I pour the eggs into a greased frying pan and once they are almost done I add some baby spinach and fold the eggs in half. Meanwhile I've got trader joe's British muffins toasting in the toaster and I'm slicing up juicy grape tomatoes.
All you really need are fresh, good ingredients to make an awesome dish. I dare you not to use salt or pepper and let the farm to table ingredients speak for themselves. I think you'll be pleasantly surprised!
