Bangers & Apple Bake

This is DELICIOUS! The aromas that waft from your kitchen will warm your heart. I’m serious. I removed the skillet slightly from the oven to drizzle honey all over and had to fight my husband from eating it right then and there. The bangers only needed a few more minutes in the oven to caramelize the honey, but my Hubsters wanted to dig in immediately.

Honey crisp apples are my absolute favorite so I used them in this recipe. I think Gala or Pink Lady apples would work just as well. To get a good char on the onions just flip them around the pan a couple of times with no oil. It’ll give the dish more depth. Have fun with it, it’s such an easy recipe!

Ingredients:

  • 6 bangers

  • 3-4 yellow onions; quartered

  • 3-4 apples; cored and quartered

  • 3-4 parsnips; peeled

  • olive oil; 2 tablespoons

  • red wine vinegar; 2 tablespoons

  • honey; 1 tablespoon

  • salt and pepper

Directions:

  1. Pre-heat oven to 350 degrees.

  2. Place large cast iron skillet (or any oven proof skillet) on the stove and warm over medium high heat.

  3. Toss the onions in the skillet for about 5 minutes or until onions begin to char, stirring occasionally. Next add olive oil, salt and pepper and stir onions for another minute or two.

  4. Place apples in the skillet and add red wine vinegar. Cool another 2-3 minutes.

  5. Place parsnip strips on top of apples and onions, then put the bangers on top of everything.

  6. Put the skillet in the oven for 30 minutes. Remove and drizzle honey all over and place skillet back in the oven for additional 5 minutes.

  7. Divide between plates and serve or if you’d like, put them in a sandwich bun. Enjoy!
