Baked Feta Broccolini with Onions & Tomatoes

When I see blocks of cheese in a dish my mouth instantly starts to drool. I mean, who doesn’t love blocks of cheese in their meal? This recipe checks off every single box for me when deciding what to make for dinner. A baking sheet and one pot? Check. Less than five minutes in prep? Check. Full of flavor? Check.

All you have to do is split the broccolini in half, cut into bite size pieces, halve tomatoes, carve an onion into wedges and slice half of a lemon. Anybody can that and it takes no time!

Not only does this recipe look pretty, it tastes amazing! My picky kids even ate it. Well, to be completely honest they only ate a few pieces of broccolini - just the bare minimum for their ticket for dessert. But they ate the rest with actual smiles on their faces. I found this recipe in the NYTimes food section a few weeks ago and it did not disappoint. Try this out for your next family meal!

Ingredients:

  • Bunch of broccolini; ends trimmed, split in half cut into bite size portions.

  • 1 pint grape or cherry tomatoes; halved

  • 1 red onion; peeled and chunked into wedges

  • 1/2 of a lemon sliced into thin rounds; the other half reserved for drizzle and garnish

  • 3 TBSP olive oil

  • 1 tsp cumin

  • 1/2 tsp red pepper flakes

  • 1 large block of feta; cut into 1 inch slices

  • salt and pepper to taste

  • cooked pasta for serving (I used orzo)

Directions:

  1. Preheat oven to 400 degrees. Boil water in a pot on the stove.

  2. While the oven is heating and you are waiting for water to boil prepare broccolini, onion, tomatoes and lemon. Spread out all over a sheet pan. Evenly coat with olive oil, then add spices and gently mix. Place feta slices in between vegetables. Salt and pepper to taste.

  3. Place sheet pan in the lower third of the oven and bake for 15-20 minutes, stirring halfway. Cook pasta according to package directions.

  4. Serve over a bed of pasta, drizzle juice from leftover lemon and enjoy!
