Eggy Prosciutto Asparagus Pizza

I know putting eggs on your dishes is currently out of style in the food world but I still love it. So, whatever. I’m adding my dang eggs and toasting them up on my pizza tonight. I love adding different ingredients to my pizzas. I’ve got small kids and eating plain pizza is a constant in my life. I’m starving my taste buds of flavor and that’s not fair. Its time to be selfish, so I made this pizza for me and my hubby. Its delicious and its easy. That is the equation in my kitchen: yum + easy = dinner at my house!

Ingredients:

  • Your favorite pizza crust. I used naan bread and fire stone pizza crust.

  • Asparagus tips; grab a fresh bunch of asparagus (12-15) and cut tips off to use

  • 2 handfuls of arugala

  • 2 garlic cloves; minced

  • 5-6 slices of prosciutto; cut into bite size pieces

  • 2-3 medium eggs

  • 1/2 cup mascarpone cheese

  • 1/3 cup ricotta cheese

  • salt and pepper to taste

Directions:

  1. Place a pizza stone in the oven and preheat to 425 degrees F.

  2. In a medium saucepan, heat good olive oil over medium-low heat until warm then add asparagus tips. Cook for 5 minutes.

  3. Brush olive oil over pizza crust and cook for about 2 minutes and remove from oven

  4. Add garlic and arugula to the sauce pan with the asparagus and cook until arugula is wilted

  5. Mix ricotta and mascarpone together and season with salt and pepper to taste.

  6. Top the pizza dough with a layer of cheese mixture and then add asparagus tips and arugula. Slide the pizza into the oven for about 2 minutes. When the crust is golden, break eggs on the pizza and bake for 5 minutes or until set. Remove the pizza from the oven and top with prosciutto. Enjoy!
