Lemony Arugula Chicken Salad

15 MINUTE MEAL!!

That’s all you really need to know, right? You’re busy, I’m busy, we’re all busy. So here is a great meal scaled down for the normal, everyday person to make and enjoy.

Do yourself a huge favor and go pick up one of those pre-made fully cooked chickens that most grocery stores carry. Wegman’s groceries carry rotisserie, bbq and lemon chickens. For this recipe, I scooped up the lemon chicken.

The only actual cooking you’ll do is boiling a bit of water in two different pots for the corn and couscous. Yup, that’s it.

Slice up your cucumber and chicken, whisk the dressing together and you are GOOD TO GO!

Ingredients

  • Chicken breast; my recipe is BASIC and I pick up fully cooked chicken for $5.99 at my grocery store. If you want to make lemon chicken from scratch here’s a link to a chef I love: https://www.foodnetwork.com/recipes/ina-garten/lemon-chicken-breasts-recipe-1923711

  • 16oz Arugula

  • 1 cup sweet corn, cook according to package directions

  • 1 cup couscous, cook according to package directions

  • 1 cup cucumber; quartered

Dressing Ingredients

  • 2 tablespoons fresh lemon juice

  • 4 tablespoon extra virgin olive oil

  • 1 teaspoon honey

  • Sea salt and fresh ground pepper to taste

Instructions

  1. Cook corn and couscous according to package directions. Add a few pinches of salt to the water in both pots for added flavor.

  2. While corn and couscous is cooking, make dressing - in a small bowl add all ingredients together and whisk.

  3. Last, plate all the ingredients starting with the arugula then corn, couscous and cucumber. Drizzle dressing all over and add sliced chicken breasts. Thats it!!! Enjoy:)
