Easy Baked Garlic Shrimp

This is a 15 minute recipe that’s simply fabulous. You can follow the instructions for this recipe and be done cooking in 15 minutes or less! Cooking dinner in a short amount of time is crucial when you are an actual normal person, that isn’t a master culinary chef. Some recipes are advertised that they are 15 minute meals but then you realize you don’t have sick knife skills or your own sous chef. So that “15 minute meal” is actually a fifty-three minute meal. I mean, c’mon. That is not cool. So with confidence I can tell you that this recipe can be done in 15 minutes.

If you are feeling more fancy and have a few minutes to spare you can replace the garlic powder with 3-4 large garlic cloves; minced. Instead of using store-bought grated Parmesan cheese, you can get a fresh block of Parm cheese and shred it with a grater over your shrimp.

No matter what, this dish is packed with flavor! And as always, just think about the 10 to 15 minutes you’ll spend waiting in line at a drive-through for awful food compared to the 10-15 minutes you’ll spend preparing and cooking a much more healthy dinner for yourself. Feel good about yourself and treat yourself the way you should be treated - healthier!

Ingredients:

  • 1 lb large shrimp; peeled, deveined and tails trimmed

  • 8 oz fresh(ish) pasta; I used wegmans tender angel hair pasta (cooks in 3 mins!)

  • 1/2 cup butter; melted

  • 2 tsp garlic powder

  • 2 tsp kosher salt; for the shrimp

  • A few healthy pinches of kosher salt in the boiling water for the pasta

  • 1/3 cup grated parmesan cheese

  • 1 tsp crushed red pepper flakes (optional)

  • Parsley, chopped (garnish)

Directions:

  1. Pre heat oven to 400 degrees F

  2. Boil water for the pasta and add salt to the pot. Cook pasta according to package directions.

  3. In a large bowl, add the shrimp and pour the melted butter all over and toss to coat. Then add garlic powder, salt, parmesan cheese and red pepper. Mix

  4. On a large baking sheet spread the shrimp all over and bake for 8 minutes. Shrimp should be pink.

  5. Once fully baked, take shrimp out of the oven. When the pasta is fully cooked place pasta in a serving dish, add cooked shrimp and garnish with parsley. Serve immediately, Enjoy!
