Stuffed Cucumbers

This can be an easy snack just for you or a fun party finger food to serve to your friends. Additionally, this recipe is simple and takes no time at all. Which is essentially my motto on this page. I ask myself basic questions like: Does it taste good? How long does it take? Are there any crazy ingredients?

And my general rule of thumb is that if it tastes good and its easy to make then I share it!

Slice the cucumbers in half lengthwise.

Scoop out the seeds so they don’t get soggy.

You can add any seasoning you want with the softened cream cheese. If you don’t have a nut allergy I highly recommend adding chopped walnuts.

Ingredients:

  • 2 Cucumbers

  • Block of softened cream cheese (8oz)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • chopped parsley

  • 1 oz chopped walnuts OPTIONAL

Directions:

  1. Peel a few strips of the cucumbers, leaving the cucumbers with skin on them.

  2. Slice the cucumbers in half lengthwise. Scoop out the seeds using a small spoon.

  3. In a bowl combine cream cheese, garlic powder, onion powder and walnuts (if you are using them)

  4. Spoon the mixture into the cucumber boats. Cut the cucumbers into bite size pieces. Garnish with paprika and parsley. Enjoy!
