Pesto & Panko Lamb Chops

2lbs Rack of Lamb
1 cup panko bread crumbs (or any good brand of bread crumbs)
1 tablespoon basting oil
6-7 tablespoons of basil pesto sauce* you can make your own, see below
Salt and Pepper


1. Preheat oven to 450 degrees. Combine basting oil with bread crumbs and mix with you hands or fork.
2. Season lamb with salt and pepper. Then coat each chop with the pesto bread crumb mixture by pressing firmly.
3. Bake on baking sheet - 20 minutes for medium.  Check internal temperature by inserting a thermometer.
4. Transfer lamb to clean dish and let rest.

Pair with green beans and mashed sweet potatoes.
