Mushroom and Herb Crostini

Roasted Tomato with Ricotta Crostini

Directions for baking your baguette:

  1. Heat oven to 400 degrees. Place the baguette slices on a baking sheet and brush both sides of the bread with the olive oil.
  2. Bake until golden brown, 4-5 minutes per side. Top as desired. The crostini can be toasted up to 3 days in advance.
  3. If you want your baguette more toasted place under the broiler under high and watch it like a hawk because they'll brown very quickly! You can make the baguette slices 2-3 days earlier just bake them and keep at room temperature using an airtight container.

Locks with Dill Cream Cheese

  1. Combine 4 oz. cream cheese, 1T. chopped dill, and 1/2 T. prepared horseradish;
  2. Season with salt and pepper. Dividing evenly, spread the cream cheese mixture on crostini's and top with 4 oz. smoked salmon then sprinkle with more dill.

Roasted Tomatoes with Ricotta

  1. Toss 4 cups of grape tomatoes with 3 T. olive oil and season with salt and pepper.
  2. bake tomatoes in the oven at 400 degrees for about 20-25 minutes; until the tomatoes begin to soften.
  3. Dividing evenly, spread 1 cup of ricotta cheese over the crostini's and top with tomatoes. Sprinkle with fresh thyme, if desired.

Mushroom and Herb Crostini

Directions for Mushroom and Herb Crostini:

  1. Cook 12 oz of sliced mushrooms in olive oil in a pan over medium high heat until tender; approximately 4-5 minutes.
  2. Add 1/2 cup white wine and simmer until its evaporated; approximately 3-4 minutes. Season with salt and pepper.
  3. Divide goat cheese evenly over crostini's and top with seasoned mushrooms. Garnish with chopped chives, if desired.
