Poached Egg, Tomato & Avacado Sandwich

The fresher the egg, the better the results when you poach them! Its actually very easy to poach an egg you just need a few ingredients and some confidence!

Bring a pot of salted water (1 tsp Kosher salt) to an almost boil - a light simmer.  The fewer the bubbles the better because bubbles agitate the eggs.  Then add 2 tablespoons of white vinegar. Personally I don't mind the taste of vinegar so I add a lot more.  Vinegar makes the egg white stay close to the yolk.

Crack an egg into a small glass or ramekin bowl and gently pour the egg into the pot.  Cover quickly and set the timer for 4 minutes.  When done, scoop the egg out with a slotted spoon and add it to any breakfast bread.

Here I toasted a multigrain roll and added farm fresh tomato slices and a slice of avocado.

Easy, delicious and healthy!
